    Make the herb butter

    Mix melted butter with minced garlic, lemon juice, lemon zest, parsley, and dill. Season with salt and pepper.

    Prep the salmon

    Pat salmon fillets dry with paper towels. Season both sides with salt and pepper. Brush with a little olive oil.

    Grill skin-side down

    Preheat grill or grill pan to medium-high. Place salmon skin-side down and cook for 6–7 minutes without moving.

    Flip and glaze

    Carefully flip the salmon. Brush generously with the herb butter. Cook for another 3–4 minutes until just cooked through.

    Rest and serve

    Rest for 2 minutes, then drizzle with remaining herb butter. Serve with lemon wedges and your favourite side.

💡 Chef James's Tip

Don't move the salmon while it's grilling skin-side down — let it release naturally from the grill. If it sticks, it's not ready yet. Patience gives you that perfect crispy skin.
